SAN DIEGO, CA, May 04, 2012 (Press-News.org) The food industry has been in the public eye to an uncommon degree in recent years. Consumers can't seem to get enough of celebrity chefs and beautifully composed photographs of tasting menus and baked goods. But food production today starts long before it reaches the kitchen. Behind the scenes, faculty and students at research universities around the world are developing new techniques that propel the food industry forward year after year. In this month's issue of Food and Drink Digital, we talk Dean Mark D. Shelton, Ph.D., Associate Dean at Cal Poly San Luis Obispo's College of Agriculture, to find out what's going on in the world of public university research.
"Public universities are really an engine of innovation and problem solving for the whole economy," says Shelton. "It's way beyond agriculture. The private schools do it as well ... But the public universities, which I'm most familiar with, do a tremendous service to the economy."
What can a public university research program offer to the public and private sectors, and why are leaders of these programs like Shelton fighting to keep federal funding in place?
