LONG BEACH, CA, June 14, 2012 (Press-News.org) The heat is on this summer and Z'Tejas Southwestern Grill at South Coast Plaza is embracing the season with a new menu introducing innovative light dishes with fresh ingredients prepared by Executive Chef Daniel Stevens. Available from June 19- August 19,the new summer fare includes a Southwestern Crab Salad stacked with crab meat, cucumbers, grape tomatoes and avocado; Citrus Glazed Barramundi seared over an open flame and finished with a citrus glaze, served atop a bed of roasted summer succotash and topped with grilled pineapple salsa; and Lobster Ravioli topped with a roasted green Chile sauce and red bell pepper puree. For dessert, guests can enjoy the new 21 Berry Trifle, a Tequila soaked sponge cake layered with el Jimador Silver Tequila mousse and fresh berries (must be 21 and over to order).
Two new summer cocktails also will mark their debut. Among the new offerings are a White Grape Cilantro Margarita with el Jimador Silver Tequila, Cointreau, white grapes and lime juice with a sprig of cilantro created by award-winning mixologist Kim Hassarud and the Skinny Pineapple Honey Faux-Jito with Pineapple Honey Vodka, Herradura Agave Nectar, soda water, lime, mint leaves and a splash of Midori (just 250 calories).
"We're excited to debut our new summer menu that offers light, flavorful items that are ideal for the season," said Jeffrey Grasso, Z'Tejas' general manager. "And what better way to enjoy the new menu than by dining under the stars on our garden patio."
Z'Tejas Southwestern Grill offers a wide array of fresh, flavorful and innovative menu items inspired by culinary influences from Louisiana, Texas, California and Mexico. The restaurant's interior features an exhibition kitchen, private dining room, mahogany bar, wrought iron detailing, handcrafted tile work, copper accents, jewel-toned fabric lined booths and flattering amber-colored lighting.
