ST. CHARLIES, IL, April 03, 2011 (Press-News.org) Bistro One West (1 W. Illinois St., St. Charles, Ill.; (630) 444-0600) is hosting Duckhorn Vineyards at a four-course wine dinner with pairings 6:30 p.m. Thursday, April 28 with spokesperson Judi Britt. The cost is $95 per person (inclusive of tax and gratuity).

Chef Doug D' Avico is preparing an amazing menu starting with Smoked Rushing Waters Trout with razor clams and pickled onions paired with 2007 Decoy Sauvignon Blanc followed by Wagyu Carpaccio with avocados and toasted pistachios paired with 2008 Duckhorn Napa Valley Cabernet Sauvignon. The main course is Venison Wellington with morels and wild asparagus paired with 2007 Duckhorn Three Palms Merlot and finished with a delicious dessert—Laura Chenel Artesian Goat Cheese Cheesecake with roasted grapes paired with 2008 Paraduxx Zinfandel.
