Martinez & Company fine coffees would like to explain how you can brew the perfect batch, with two different methods. One is hot and will yield your delicious reward right away. The other is cold and will require a bit of patience (but it's worth the wait!).

For starters, there are some basic rules you should follow with either method. The beans you use matter. Choosing a high quality gourmet coffee will give you a better tasting, more complex cup. Freshness plays a lot into this too. If you can, grind your own beans just prior to brewing your coffee. This will really bring out the most of their flavor.

For the hot to cold method, brew a double strength batch to start with, to account for the dilution that will occur from the ice; pour it over ice immediately (or brew directly over ice, if you can). For the best possible ratio, use 4 ounces of ice for each cup of iced coffee you intend to make. Then, simply sweeten, if desired, and enjoy!

The cold method is, in some ways, superior; cold brewing extracts the flavor but not the acidity. This makes it the method of choice particularly when using finer quality beans, such as an estate coffee. For this recipe, use a 1:6 ratio of ounces of coffee to quality filtered water. Stir the mixture in container like a mason jar and let sit in the fridge or on the counter for 12 hours to 18 hours . Finally, pour through a cheese cloth or paper filter into another container and serve over ice, with sweetener if you like! J.
