Guided by the philosophy that farms feed cites and driven by his passion for food, Philip Yeung has created a menu that he considers to be a tribute to Irish food producers. He believes that the best foods are seasonal and local and as a result of this menus are changed regularly at BANG and always reflect this ethic. Philip has searched extensively to source his suppliers. He believes that his vegetables should still be in the ground 12 hours before they are in his kitchen, and that only the very highest levels of craftsmanship, care and dedication will yield the ingredients he wants in his dishes. He has sourced the finest suppliers from every corner of Ireland for his menus.
'The Gathering' tasting menu is a delight for the palate and starts off with a 'Gearu Goille', a little surprise course from the kitchen to whet the appetite, or amuse the mouth as the French like to put it. House cured salmon from the wilds of the Atlantic at Clare Island is followed by the divine smoothness of Killkeel Harbour John Dory. The drama builds with exquisite flavours of hand-reared Skeganore Duck from West Cork served with the earthy taste of local white turnip and leek. Finally the intensity of Hereford beef, slow cooked with Guinness and red wine provides a melt-in-the-mouth, rich taste that truly satisfies. After a short break it's time to finish off the experience with delicious Duras and Killeens Irish cheese, served with magnificent truffled honey, grapes and homemade crackers followed by a beautifully light stem ginger Panacotta and seasonal rhubarb soup accompanied with home made shortbread biscuits - the perfect way to end a truly memorable and special meal.
